Domaine Jean Yves Bizot is a revered small-scale Burgundy wine producer located in the Côte de Nuits, known for its dedicated following. Specializing in Pinot Noir, Bizot sources grapes from premier cru vineyards in Vosne-Romanée and the grand cru vineyard of Echézeaux. Additionally, the domaine produces limited quantities of Chardonnay at the village level, as well as Bourgogne Blanc, with holdings in Marsannay and Bourgogne Chapter. The estate spans just over three hectares (eight acres).
The current estate took shape in 1995 when Jean Yves Bizot, an oenology professor, inherited the vineyards and winery from his family. Bizot employs a minimalist winemaking philosophy.
The winemaking process at Domaine Jean Yves Bizot is distinct: grapes are fermented in whole clusters, without destemming or pressing. Fermentation occurs in conical wooden vats over 14 to 20 days at controlled low temperatures.
All wines, ranging from Burgundy Red to Grand Cru, are aged in new French oak barrels for 15 to 20 months. The wines are neither racked nor filtered, and bottling is done by hand, barrel by barrel. Each label details the specific barrel used for aging, emphasizing the estate's commitment to artisanal craftsmanship.
